ORANGE YOGHURT CUPCAKES

Bahan:
  • 100 g mentega tawar
  • 75 g gula pasir
  • 2 butir telur ayam
  • 200 ml yoghurt tawar
  • 50 ml sirop jeruk kental, siap pakai
  • 2 sdm cointreau *)
Ayak bersama:
  • 175 g tepung terigu serbaguna
  • 2 sdm kulit jeruk potong parut, dari 2 buah jeruk potong
  • 1 sdt baking powder
  • ½ sdt garam

Topping, aduk rata:
  • 100 g cokelat masak putih, lelehkan
  • 2 sdm yoghurt tawar
  • 2 sdm cointreau *)

Hiasan:
  • 24 buah jeruk mandarin kalengan, tiriskan
  • 12 lembar daun mint
  • 1 sdm hiasan berbentuk pita dari kulit jeruk orange

Cara membuat:
  1. Cake: Kocok mentega dan gula pasir hingga lembut, masukkan telur ayam satu per satu, sambil dikocok terus hingga rata.
  2. Masukkan yoghurt tawar dan sirop jeruk, aduk rata. Tambahkan campuran tepung sedikit demi sedikit, sambil aduk rata.
  3. Tuang ke dalam cup kertas berbentuk bulat diameter 6 cm hingga 3/4 tinggi. Panggang di dalam oven panas bersuhu 180° C selama 30 menit, angkat. Dinginkan.
  4. Perciki seluruh permukaan cupcakes dengan cointreau hingga rata, sisihkan.
  5. Tuang 2 sdm bahan topping di atas permukaan cupcakes, diamkan hingga membentuk seperti lelehan es krim. Letakkan bahan hiasan di atasnya. Sajikan.

*) Cointreau: Minuman beralkohol dari campuran kulit jeruk. Biasanya digunakan untuk membuat dessert. Dijual dalam kemasan botol kaca.
