ASAM PADEH

PANGEK LAUAK' adalah ciri khas dari masakan Pariaman. Kalau di Bukittinggi dan di Padang namanya 'Asam Padeh'.
Masakan ini sangat digemari karena cara pembuatan yang sangat gambang dan sederhana, serta rasa segar dan pedasnya.

 
Bahan-bahan:
ikan
cabe giling
daun kunyit

asam kendis
3 cm jahe
5 siung bawang putih
5 siung bawang merah
garam secukupnya
500 ml air putih
 

Cara pembuatan:
1. Giling bawang putih, bawang merah, dan jahe sampai halus
2. Campurkan cabe giling dengan bumbu yang sudah dihaluskan dan cairkan dengan air
3. Masukkan ikan ke dalam wajan, sebelumnya letakkan daun kunyit sebagai alas wajan
4. Masukkan bumbu yang sudah dicairkan dengan air kedalam wajan
5. Panaskan sampai mendidih
6. Masukkan asam kendis dan tambahkan garam secukupnya. Masak sampai matang
